Our Blackforest cakes are made in the true European fashion. They consist of a chocolate sponge cut into 3 layers that is soaked with a kirsh liqueur. The bottom layer is covered with imported cherries. The second layer is fresh cream. The whole cake is then covered with fresh cream and decorated with chocolate sprinkles around the outside and cream dots around the top edge. Croquembouche is the traditional French wedding cake made from filled choux pastry shells joined together with sugar syrup that is heated to 154 degrees celcius. The choux pastry can be filled with either fresh cream or a custard and flavoured with liqueur. Our most popular filling is a custard cream flavoured with coffee and Tia Maria. Croquembouche MUST be made and eaten on the same day and are made by 2 pastry chefs working as a team. Because of the time required to make them (3 hours labour for minimum size), we can only do them on a Saturday.

Our Fruitcakes are made from scratch, using only the best ingredients. i.e. A grade fruit, Quality Marzipan etc. The fruit is soaked in rum before hand.
The iced fruitcakes consist of a layer of Marzipan, then a layer of white icing. Our head Pastrycook , Peter Elliott is the only one who cooks and ices the cakes. Pirjo Elliott then assists with the decorating. We can bake sizes up to a 12” square and can do either rounds, squares or hearts in most sizes. All wedding cake enquiries are done on a quotation basis and we ask that you inform the staff as to what you are after and we will contact you the following day at the earliest.
N.B Please order your fruitcake as early as possible. 3 Weeks notice or more is ideal. We bake our fruitcakes in mixes, not individually, so whilst we usually have fruitcake on hand to decorate, we do not always have all the sizes in stock.

Stollen is the traditional German Xmas cake. It is a yeast based cake filled with mixed fruit and spices. Once out of the oven, it is coated with melted butter and rolled in cinnamon sugar. It is then dusted with vanilla sugar before it is wrapped. It has a delicious light taste and is traditionally served in small bite size pieces. Great on a platter with fruitmince pies to serve with coffee after the Christmas meal.
Available with or without marzipan. The marzipan stollen has a roll of marzipan at one end.
